Pineapple Chow

Chow is a spicy dish of pickled fruit enjoyed in Trinidad and Tobago. Despite its fiery flavor, the briny sweetness makes it a refreshing snack in the blazing sun.

Ingredients

  • 3 pounds pineapple, peeled, cored, and cubed

  • 3 garlic cloves, peeled and minced (1 tablespoon)

  • 1 Scotch bonnet pepper, minced (more as desired)

  • Chadon beni leaves (culantro), finely chopped (0.5 oz)

  • 1 lime, juiced (2 tablespoons)

  • 1/2 teaspoon ground black pepper

  • 1/2 teaspoon Diamond Crystal kosher salt, adjust to taste

Instructions

Combine and marinate:

Cut the pineapple into 2-inch squares. Add the remaining ingredients and stir well. For best results, allow to marinate for 30 minutes or up to a few hours before eating.
